The Wine
Azienda Agricola Elvio Cogno exemplifies traditional Piedmontese winemaking. Accordingly, the great Nebbiolo wines here require a long time to reach optimal drinking maturity – Barolo and Barbaresco should be around 10 years old. Often inaccessible in their youth, with sufficient maturity they finally unfold into delicate, fragrant masterpieces that reveal their unmistakable origins with full clarity. Valter Fissore's classic Ravera comes from various parcels of the eponymous cru vineyard in Novello, which is characterized by limestone. The maceration takes 30 days with submerged pomace cap in steel. Then it ages for 24 months in 30-hectoliter Slavonian oak barrels. In true traditional fashion, Cogno Barolo is exclusively aged in large, used oak barrels. A very fine, captivating nose. Rose petals, dense and ripe black cherry, eucalyptus, and mint contribute ethereal notes, including coffee, cocoa bean, and spicy, leathery hints. This is classic, picture-perfect Barolo straight from the bottle, perfectly precise and finely drawn, now slowly entering its drinking window after 12 years. The nose sings and shines; it's a feast! On the palate, crystal-clear, with a velvety-silky texture and wonderful flow. The finest, ripe tannins spread, giving structure and grip to the soft mouthfeel. Aromatically, a sea of cherries, sour and sweet, red and black, paired with dark, spicy, earthy notes. This is both purist and hedonistic, with Burgundian finesse and yet aromatically unmistakably Piedmont. Great, ready-to-drink Piedmont cinema! Despite its maturity, be sure to decant the wine for a few hours; it works wonders!
