The Wine

This delicately spicy, delicate Sancerre comes from the tiny, 0.89-hectare limestone plot Cul de Loup (loosely translated as "wolf's ass"). It was aged 100% in steel on the fine lees for nine months. A very ethereal, fragrant, fresh, and clear nose. Delicate white fruit notes, plenty of lemon and lime zest, with a chalky, tart spice underneath. On the palate, it's lean with a fine salty acidity, a lovely bite, and present tannins that contribute a tart spice. Green apple, pure Granny Smith, bathed in lime and lemon zest, is complemented by a chalky, stony, salty, and piquant finish with great length. A beautifully chilled, precise, and relatively uncompromising Sancerre with powerful energy and no frills. Chapeau!
