The Wine

Aux Fournaux is a Premier Cru vineyard in Savigny-lès-Beaune; since Chandon's Aux Fournaux also uses grapes from a part of the vineyard that is declared a local wine, the Premier Cru designation is omitted from the label. Vines from over 60 years old, grown on clay and limestone, spontaneously fermented whole clusters, and almost exclusively used oak. A very dense, black fruit nose. The darkest cherries imaginable. The finest sweet fruit. It's so sweet on the nose, what extract, what fruit! Completely silky on the palate, and this sweet extract continues in the same vein. Plus, the finest acidity and freshness. Blackcurrant, black berry fruit, black cherry, all black, such a sweet extract, and of course, zero residual sugar, totally polished. Totally approachable in its silky fruit, it has a melting quality and incredible density, truly juicy fruit, but completely trimmed for elegance; everything is just right here. This is essentially Chandon's entry-level red wine, and it's truly breathtaking. Such elegance combined with a smooth flow is simply thrilling! Everything is in its place here; it's both forward-thinking and indulgent; Chandon's entry-level wine is truly grand, hedonistic cinema. It still has years to go, but can be poured into a carafe and enjoyed without hesitation.

The Winery

Chandon de Briailles
Chandon de Briailles Located in Savigny-les-Beaune, Chandon represents a purist Burgundy style on the Côte d'Or, featuring biodynamic viticulture and uncompromising "do-nothing" in the cellar. Formerly a Parisian wine merchant, Francois de Nicolay and his sister Claude cultivate some of the absolute top vineyards between Beaune and Corton. The wines produced here are bright, extremely juicy, and some are already drinkable even in their youth.
