The Wine

A cuvée of Trebbiano and Malvasia, along with small portions of the native Orpicchio. The farm's vines grow on the hills between Arezzo and Florence at approximately 300 meters above sea level. Harvested early in the morning, two-thirds of the grapes are then vinified in steel tanks. The remaining grapes undergo a long maceration on the skins (sometimes with malolactic fermentation); both fermentations are spontaneous. The result is a wonderfully uncomplicated and stimulating white wine. The nose is characterized by wildflowers, chamomile, and sage; then, in the second moment, some fruit such as ripe peaches and apricots emerge. On the palate, it is salty, with some light earthy notes. A wonderfully rounded mouthfeel, yet still characterized by freshness and flow. Ideal as a food accompaniment to light pasta dishes such as carbonara or gricia, but also with fish and salads. A charming wine that is not overpowering yet still memorable.
