The Wine
CMM now operates entirely biodynamically. The vineyards are worked entirely by hand, with low intervention in the cellar. The Clos de la Perriere comes from old Chardonnay vines directly surrounding the monastery. Fermented spontaneously, then aged for 12 months in various types of oak, primarily large and used, with a small proportion of new oak. A maritime nose, salty and chalky like a sea breeze. Fresh, yellow citrus fruit blends in, along with a tart, herbaceous spiciness and some shortbread, with yeasty hints and a subtle smokiness. It's all very expressive and engaging, with a hearty, spicy character. The palate is immediately piquant and salty, with a totally stimulating, intense entry. A hint of yellow stone fruit, some pear and Granny Smith, and a touch of lemon, then the salt and stone crash in again. It has a phenolic bite and a mineral-stony intensity; it's really enjoyable. A very powerful, energetic Chardonnay full of excitement that pairs well with a variety of seafood and vegetables. A real treat with fantastic value!
