The Wine

The Chardonnay grapes for this Chablis come from approximately 30-year-old vines. A pale straw yellow with light green reflections, the wine enters the glass. The nose is full of freshness, lightness, and spice. Green apple paired with citrus fruits, along with a nutty and almond note. The aroma is carried by a cool stoniness reminiscent of oysters and white limestone. Sweet, spicy yeast notes can also be discerned very subtly in the background. The palate is also carried by the cool stoniness and maximum freshness. The beautifully integrated acidity drives forward, a certain melting softens the palate. Here, too, associations with oysters, which, like mussels, would probably make an ideal food pairing. With a little airing, this Chablis improves immensely. A great wine for all those who love the cool, mineral Chablis style!
