The Wine

The Chieto Bardolino Rosé is composed primarily of Corvina, with a touch of Rondinella and Corvinone. A true Northern Italian, in which the characteristics of the grape varieties come to the fore. The grapes are only partially destemmed and pressed after brief skin contact; only the first pressing is used for the Chieto. It then undergoes spontaneous fermentation in steel tanks to a residual sugar content of 0 grams, followed by ageing on the fine lees for approximately 6 months. An expressive, fruity nose full of dark red to black fruit, sweet and sour cherries, also a hint of grapefruit, with a spicy note and a hint of fruit tea. On the palate, crisp and dry with a fresh attack, a slim, fine body, and a beautifully balanced texture; the Chieto is soft and smooth with a great flow, the tannins providing a fine grip on the tongue, it has bite and character at the end, and displays a lovely length. A beautiful interplay of fruity, delicious approachability and a crisp, characterful, and stimulating structure. It pairs perfectly with all kinds of antipasti and summer dishes like seafood salad or classic bruschetta, as well as grilled red meat.
