The Wine

The Crozes-Hermitage Les Croix is ​​a single-varietal Syrah from vines that are an average of 60 years old. Intense ruby ​​red in the glass, fading to black in the center. Initially animal and meaty on the nose, it reveals dark fruit aromas of plums, cassis, and black cherry. These fruit aromas are supported by a carpet of elegant spice reminiscent of cloves, allspice, and dried wild herbs. The palate is equally fleshy and dense, full of dark chocolate and tobacco. The extremely powerful and highly concentrated structure practically massages the fine tannins into the tongue; the power knocks you off your feet, and you'll be craving another sip—what a balance of power and freshness! After spontaneous fermentation in concrete, the wine remains on the fine lees for 18 months, first for a year in used barriques and then again in concrete. Awesome stuff that pairs beautifully with red meat or game.
