The Wine
Immediately upon opening, a restrained, very fine nose of white peach and white blossoms, with a subtle hint of slate smoke beneath. Totally delicate, filigree, all nuanced, completely floating. With aeration, some red fruit emerges, and the pure white and smoky character becomes more complex. There's also plenty of herbal spice and salty lemon. On the palate, it's lean and crisply dry, with only light fruity hints. Salty acidity lingers on the finish, the finest tannins emerge, and fresh citrus bursts into the mouth, bright, crisp, and salty. Structure, acidity, and citrus dominate here; all subtle, yet superbly intense and long. From a developmental perspective, this is truly a bunny; even after 24 hours of aeration, it's still a real bunny. If left in the cellar for a while to allow peace and balance to return, this bunny will delight lovers of finesse and delicacy!
