The Wine

A rosé sparkling wine made from 100% Corvinone, produced using the Methode Ancestrale (Pet Nat method). Maceration time approximately 3 hours, followed by gentle pressing. Aged on the fine lees for 10 months in stainless steel. Bottled unfiltered and completely sulfite-free. Second fermentation in the bottle. Very fragrant, with yeasty notes, grapefruit and ripe lemon, yellow stone fruits. On the palate, it's fresh and juicy, with fruit, slightly bitter citrus peel, and plenty of yeasty notes, yet beautifully tart and dry with decent tannins, yet very subtle and never overpowering. The Biso is a wonderfully tart, bone-dry, and invigorating sparkling wine, the perfect refreshment on warm days and probably pretty much exactly what some people mean when they talk about "terrace wines." It's perfect on its own, as an aperitif, or throughout the day, on virtually any occasion, and, of course, with cicchetti. We really like the Biso!
