The Wine
Guillaume's Pouilly-Fumé perfectly embodies the purist, precise style of Les Poëte. Matured mostly in steel, with a small portion in a used 600-liter barrel. Herbaceous nose, citrus, especially lime, and dusty, stony notes. Fresh herbs, tarragon, lime zest, all very green, fresh, and fragrantly spicy. Wonderfully structured on the palate, lively acidity, herbal spice throughout the mouth, stony minerality beneath, fresh citrus notes emerge, then a salty, piquant finish. A truly archetypal Pouilly-Fumé with plenty of grip and boundless energy, it really puts you in a good mood! A wonderful accompaniment to a variety of vegetables such as zucchini or green asparagus, seafood, or even a classic porchetta.
