The Wine

The finest grapes from Zieregg, the "IZ" stands for intracellular fermentation, better known as carbonic maceration. This lasted approximately 100 days, followed by 42 months on the fine lees before being bottled unfiltered. A truly intense, expansive nose. Typical Sauvignon Blanc, typical STK, typical Tement, but with a round, harmonious density, substance, and compact character, darkly spicy, herbal, deeply mineral—a dream on the nose. This dense, focused, and polished character continues on the palate. Integrated acidity, just the right amount, a finely creamy texture, perfectly polished tannin structure, incredibly salty and piquant on the tip of the tongue, then rolls down the palate into the finish. Crystal-clear, herbal with ethereal hints, with plenty of ripe yellow fruit, yet so fresh and focused. It's incredibly balanced, round, and simply on point, with an impressive, massive aromatic presence. The wine lingers on the palate for minutes, lingering. Salt, piquancy, stone, but also a certain generosity and richness. This is, one must say, Sauvignon Blanc perfection. The "simple" Zieregg is a touch leaner, lighter, more lively, perhaps even more refined. The IZ stands alongside it like a monument without the slightest flaw, radiating absolute grandeur and leaving a lasting impression.
