Burgundy extends beyond the Côte d'Or. Beyond this famous wine-growing region, high-quality red and white wines thrive, many of which, although excellent, are largely unknown. Some outstanding examples still remain in the shadows, but one has always been free of this anonymity: Chablis. Chablis is located near Auxerre, about 180 kilometers south of Paris. The region is named after the charming town of Chablis, which lies along the Serein River, which is more of a stream than a river. The best Chablis wines, Chablis Premier Cru and Chablis Grand Cru, are complex and delicate, characterized by a refined, mineral bouquet that combines floral and mineral nuances. Their ageing potential is often somewhat overrated, as even top-quality Chablis reaches its peak after five to ten years.

The effects are devastating and have already destroyed entire harvests. These late frosts are the main reason for the declining viticulture in Chablis. Although the cultivation area was expanded in 1944 and the Petit Chablis appellation was established, the area planted with vineyards now amounts to only about 4,500 hectares.
