The Gimonnet Champagne house has been located in Cuis, in the heart of the Côte des Blancs vineyards, since 1826. The vineyards cover nine hectares, most of which are classified as Premier Crus. In 1996, Jean-Luc Gimonnet took over the family business and implemented several initiatives focused on protecting the environment and applying modern viticultural techniques. For 20 years, he has left the grass in the vineyards, which reduces yields while increasing the focus and clarity of the wines. Over the years, he has also continuously reduced the dosage to more clearly express the vineyard's characteristics.

In the cellar, the majority of the wines are matured in stainless steel and a small portion in oak barrels. They mature on the lees for at least 15 months in the cellar, sometimes taking several years before disgorging. This is the case with the La Guette Premier Cru 2008 , a single-varietal Chardonnay that has spent 13 years on the fine lees and is extremely smooth and delicately spicy when tasted in the glass. The Rosé Premier Cru is also largely made from Chardonnay and gets its color from a small proportion of Pinot Noir. It has everything you could want from a rosé champagne: delicate spice, juicy red fruit and a soft mousse. The Réserve Brut is our house champagne, which is refreshing and uncomplicated. 48 months on the fine lees give it a pleasant spiciness, while a little Pinot Noir and Meunier keep the effervescence of the Chardonnay in check. Jean Gimonnet simply makes honest champagnes that you can drink practically every day.
